Chicken Korma Recipe is Indian Recipe Prepared with Indian spices and ingredients using onion, tomatoes, whole spices, dry spices and with chicken.
Korma means chicken gravy, which is prepared to serve enough for 4 to 6 or more people in family.
Korma is prepared with many variations like you can prepare korma with adding water in the recipe, or adding coconut milk in the recipe, or with adding curd and water mix in the recipe.
How to make chicken korma recipe Indian style
To make chicken korma recipe Indian Style, first Gather all the below ingredients, then follow my easy to understand cooking with step wise picture help Instructions.
Ingredients in Chicken Korma Recipe:
- 1200 grams of Chicken
- 150 Grams of Curd
- 5 medium sized of Onions
- 3 Fresh Red Tomatoes
- 5 tea spoon of Red Chilli Powder
- 2 table spoon of Coriander Powder
- Half Tea spoon of Cumin powder
- Half Tea spoon of Turmeric Powder
- 2 table spoon of fresh ginger garlic paste
- 1 table spoon of Dried Fenugreek Leaves
- Half Tea spoon of Cumin Seeds
- 2 bay leaves, 2 black cardamom, 3 green cardamom pods
- 4 cloves, 4 black pepper, 1 cinnamon stick
- Fresh coriander leaves,
- Salt
- 4 table spoon of oil
- 3 cups of fresh water
- 1 table spoon of Garam Masala Powder
Gather all these ingredients first, so that you don’t miss any ingredient while cooking.
Now let’s start Cooking Chicken Korma recipe.
Instructions for cooking Chicken Korma Recipe with Picture Help Stepwise:
Step 1:- Marination Step:
First thing first, wash your chicken pieces perfectly with fresh water and drain the excess water.
Because we have to marinade this chicken pieces. So to do it,
- In a bowl, add 1200 grams of chicken pieces
- Then add half tea spoon of Salt
- Next add Half Tea spoon of Turmeric Powder
- Then add Half Tea Spoon of Red Chilli powder in the chicken bowl
And mix everything perfectly with your hands. And now keep this chicken pieces for Marination for at least 20 minutes.
Step 2:-
Take 5 Medium Size of Onions and Cut Them Finely into thin slices like shown in the below image.
And then take 3 fresh red Tomatoes and make a smooth puree of them, using mixer grinder.
If you don’t have mixer grinder, then you can chop tomatoes finely into very small pieces and use them in this recipe.
Step 3:- Spices:
Take a small bowl and in that, Add
- 1 small tea spoon of Turmeric Powder
- 1 Table Spoon of Red Chilli Powder
- 2 table spoon of Coriander Powder
- Half tea spoon of Cumin Powder
- Half Tea spoon of Dry Fenugreek Leaves (kasuri methi)
- Lastly half tea spoon of Garam Masala Powder
Add all these spices in a small bowl and then add little little water in the bowl and mix spices and water and make a smooth paste of it.
Not too thick, not to runny paste, just like shown in the below image.
If you do like this with your spices, before adding them in the recipe, then your spices won’t get burn, and also you can get a little different taste of spices,

Step 4:-
Now take a heavy bottomed pan or Karahi (wok).
And in that add 4 table spoon of Oil and heat it for few seconds.
Then add those finely chopped Onion pieces in this hot oil. And on high flame cook onions for perfectly golden brown colour.
Once the onions are turned to golden brown colour, now remove all the onions pieces from the pan and keep fried onions aside,
We will use it later.
But for now, keep onions in a separate bowl. And now let’s move to the next step.
Step 5:-
Now in the same pan, in which we have fried onions, yess in the same pan or karahi,
Add those marinated Chicken Pieces in this oil and on High Flame,
Shallow fry chicken pieces for 4 to 6 minutes on high flame.
After 5 to 6 minutes of shallow chicken fry, now transfer this fried chicken in a separate bowl.
If you fry chicken first, then raw smell of it gets remove and our chicken pieces will become softer from inside.
Step 6:-
Now in the same pan, in which we have fried onions first, then chicken,
Now in the same pan or karahi,
- Add 1 cinnamon Stick (2 inch size)
- Add 2 bay leaves
- Add 2 black cardamom and 3 green cardamom pods
- Add 4 cloves and 4 black pepper
- add 1 table spoon of Cumin seeds
- lastly Add 2 Table Spoon of Ginger and Garlic Paste in the oil.
On medium flame, cook all these whole spices and ginger garlic paste for 30 minutes.
NOTE: when you cook whole spices in the oil, make sure oil is not much hot,
Or else, whole spices will get burn and they will give little bitter taste in the chicken korma recipe.
Step 7:-
Now add that 3 fresh red Tomatoes paste in the pan and then add half tea spoon of salt in the tomatoes,
And now mix everything perfectly and cook tomatoes for 2 minutes on high flame.
Adding salt in the tomatoes, tomatoes will cook faster and becomes soft.
Step 8:-
Now add those fried onions in the pan, but before, make sure you crush fried onions with your bare hands.
Because doing this, gravy will become smooth and chicken korma will taste better when you eat.
After you add fried onion in the pan, mix it perfectly and continue cooking on medium flame.
Step 9:-
After 2 minute, now add that spices paste which you have made in the step 3.
Yess add that spices paste in the pan and on low flame, cook spices for 3 to 4 minutes on very low flame.
Mix perfectly in the pan and make sure your gravy is smooth, (if it is not, then mash gravy with your spoon and mix)
Step 10:-
Now add that fried chicken pieces in the pan and mix it perfectly with your Gravy.
Mix gently, or else chicken pieces will break.
Note:- now turn the gas flame to medium and cook spices and chicken.
On high flame, Gravy will Dry Fast and gravy becomes thick and spices also can burn,
So on medium to low flame only, mix chicken pieces and gravy gently and cook.
Now cover the pan and cook chicken pieces with gravy on very low flame for 4 to 5 minutes.
Step 11:-
After 4 to 5 minutes of cooking chicken on very low flame, stir in the pan and now
Add 150 Grams of Curd in the chicken and gravy and mix it perfectly
And again cover the pan with lid and continue cooking for more 5 minutes on very low flame.
Note:- when you add curd in any recipe, mix curd perfectly before using it in any recipe.
Mixed curd won’t Curdle. And when you add curd in any recipe, make sure our gas flame is in very low flame or turned off.
Because on high flame, or in hot recipe, adding curd directly, will curdle your curd and it taste bitter.
Step 12:-
Here I am adding more finely Chopped Green chillies to make this chicken korma recipe more spicy and tastier.
This is optional, you can here taste your chicken korma recipe, if you want more spicy taste,
Then add 4 chopped green chillies. If needed, if not you can skip.
But I have added here 4 finely chopped green chillies and mix it perfectly.
Step 13:-
Now the final step, here add 3 cups of warm or little hot water in the chicken gravy.
And mix it perfectly. Add water how much gravy you want.
And now again cover the pan with lid and continue cooking it for more 10 to 15 minutes on very low flame.
After cooking this for 15 minutes, now garnish your chicken korma with some fresh finely chopped coriander leaves.
And yes don’t forget to add half tea spoon of Chicken masala powder or garam masala powder at the end of this recipe and cover the pan with lid and turn off the gas flame now.

Add all these ingredients in your chicken marination and keep it for at least 2 hours,
