Besan dhokla recipe in english step by step with pictures

Ingredients for dhokla and tadka water:

First gather all the ingredients, so that you don’t miss any Ingredient adding while cooking.

For dhokla:

  • Gram Flour (Besan) – 2 Cups
  • Citric Acid (Nimbu ka Satva) – 1 table spoon
  • Eno Fruit Salt – 1 table spoon
  • Turmeric Powder – ¼ tea spoon (half of half tea spoon)
  • Asafoetida (hing) – a pinch (chutkibhar)
  • Refinded Oil – 2 table spoon
  • Grated Ginger – 1 table spoon
  • Grated Green Chillies – 2
  • Sugar – 2 table spoon
  • Salt – ½ (half) tea spoon
  • Water – 1.5 cup

For Tadka Water:

  • 1 table spoon cooking oil
  • 1 table spoon mustard seeds
  • A pinch of asafoetida (hing)
  • 8 to 10 curry leaves
  • 1 table spoon of sugar
  • 2 slit cut green chillies
  • 1 cup water
  • Half tea spoon of salt
  • Half tea spoon of lemon juice.

Use all these ingredients for sure, if you want to make perfect airy, soft, spongy dhokla recipe.

 

Instructions for Cooking Dhokla Recipe:

Step 1:-

So first important and main step is preparing our perfect dhokla batter.

So to do that, you have to take Strainer and add 2 cups of Besan ka Atta (gram flour).

Sift the gram flour in strainer perfectly; this helps in Airy soft Dhokla. Don’t skip this step.

Once done, now let’s move to the next step.

Step 2:-

Now in a bowl of sifted gram flour, now we will add half tea spoon of Citric Acid.

You can easily find this citric acid in your local kirana or general stores.

You can call this nimbu ka satva also, when you go to buy this citric acid.

This citric acid gives a perfect sour flavour in our dhokla, so try must adding this in your dhokla recipe.

Step 3:-

Next, we will add water in this gram flour bowl.

So first add only 1 cup of water in gram flour and mix it perfectly.

In which cup, you took gram flour, yess in that cup only, take 1 cup of water and add it in this flour bowl and mix it perfectly.

Besan will absorbs 1 cup water perfectly,

So we again add half cup of water in the besan and mix it perfectly.

We don’t have to add directly 1.5 cup of water in the besan. It can form lumps and it won’t mix in water perfectly.

So add water exactly as I shared the instructions in this dhokla recipe blog post.

Step 4:-

Now add 2 table spoon of Sugar in this gram flour batter and mix it perfectly.

With this, also add half tea spoon of salt, half tea spoon of turmeric powder.

Now whisk all these 3 ingredients in gram flour batter perfectly.

If you want perfect airy, soft, spongy dhokla recipe, then you have to whisk your dhokla batter for like at least 3 to 5 minutes continuously.

Whisk your dhokla batter in one direction only.

Step 5:-

Now let’s add more ingredients to enhance more flavours in our dhokla recipe.

So add 1 tea spoon of perfectly grated ginger in the batter,

Then add 1 table spoon of perfectly grated green chillies in the batter,

And add a pinch of asafoetida (hing). Hing gives a nice deep flavour in dhokla. So add it.

For good moisture, add 2 table spoon of refined oil in this batter, I have added oil, because I don’t like dry taste of dhokla while you eat.

So adding oil, gives you good moisture in your dhokla.

Now again, mix all these ingredients in dhokla batter perfectly whisking in one direction only.

Let me tell you again, the more you whisk your dhokla batter, the more airy, soft, spongy dhokla you get.

So whisk this dhokla batter again for at least 4 to 5 minutes for sure.

Step 6:-

Now please stop whisking, and cover your dhokla batter with lid and leave your dhokla batter for at least 10 to 15 minutes for marination.

Please leave it.

Sorry leave your whisking your dhokla batter, not dhokla preparation.

So let’s move to the next step.

Step 7:-

So as I said, we r going to make this dhokla in glass,

So now let’s grees our glasses with little oil.

So take 4 steel glasses and add half tea spoon of oil in each glass and greese.

So that, when you add dhokla batter in the glasses, it won’t stick.

 

If you don’t have glasses, then you can make this dhokla in small bowls and moulds also.

Step 8:-

Now let’s check our dhokla batter which we have kept aside for 10 minutes for marination.

Now open the dhokla batter bowl and again whisk for 2 minutes in one directly only.

Now we didn’t added anything, just you have to whisk again after 10 minutes marination to form more bubbles in our dhokla batter.

Now at the end, we will add 1 Eno fruit salt Packet (which is 1 table spoon)

or

If you wish, you can add half tea spoon of baking soda.

After adding Eno fruit salt, now quickly mix it again in one directly for more 1 minute.

Step 9:-

Now add this dhokla batter in our greesed glasses one by one.

Add all this dhokla batter in our all the glasses perfectly.

Now this glasses are ready to for steaming.

Step 10:-

So now, take any big cooking bowl, or pan, or wok (karahi) or cooker and add 1 full glass of water and boil it first.

Once you see, your water is boiled your choosen pan or bowl.

Now put a stand in the hot water bowl and keep all this dhokla batter filled glasses in the bowl

And now cover and steam for at least 10 to 15 minutes on medium flame.

When steaming, if water is drained in the bowl, then you can add more hot water in the bowl and continue steaming.

Step 11:-

After your dhokla is steamed perfectly for 10 to 15 minutes in glasses,

Now check it with knife. If knife comes out without sticking any dhokla batter,

Then your dhokla is perfectly steamed and it is ready to go for next step.

Step 12:-

Now let’s prepare the tadka for dhokla recipe.

when we were preparing tadka, our dhokla will come to room temperature, which is perfect.

Now take a separate pan and heat 1 table spoon of oil.

Next add 1 table spoon of mustard seeds and then add a pinch of asafoetida,

Next add 2 slit cut green chillies and then add few curry leaves in the oil,

And now cook tadka for few seconds like 30 seconds.

Now add 1 cup of water in the tadka, then add half tea spoon of salt and lastly add 1 table spoon of sugar in the tadka water.

You can add half tea spoon of lemon juice also to make sweet and sour tadka water for our dhokla recipe.

Now mix and cook this tadka water for 2 minutes on medium flame.

After two minutes, turn off the gas flame and now your tadka water is ready to go for next step.

Step 13:-

Now check your dhokla’s in the glass, they have come to the perfect room temperature now,

So take out all the dhokla from the glasses.

At the corner of the glass, with the help of knife, first cut from the inside of end of the glasses and remove dhokla from it.

After taking out all the dhokla from the glasses, now cut dhokla in your preferred shape.

Now add that tadka water on all the dhokla pieces and enjoy.

Note:- if you don’t like sweet tadka water for your dhokla’s, then you can skip adding sugar in tadka water and can only enjoy sour tadka water, if you wish.

So now your soft, spongy, airy dhokla is ready and now you can enjoy eating it.

Simple dhokla recipe in english

This is the simplest and short dhokla recipe you can ever read. But super delicious like above recipe.

Instructions for preparing simple and short Dhokla Recipe:

  1. First in a bowl add 1 cup of besan.
  2. Next add 1 table spoon of sugar in the Bowl.
  3. Then add Half Tea spoon of Turmeric Powder in the bowl
  4. Next add ¼ tea spoon of Salt in the Bowl
  5. Then Add Half Cup of Water. (in which cup, u took 1 cup besan, in that cup quantity of half cup water)
  6. Now whisk and mix it properly in one directly only. Mix perfectly until all the ingredients mix together in the bowl with besan and water.
  7. Now add 2 table spoon of lemon juice in the bowl.
  8. Again mix perfectly in one direction only and keep it for 10 minutes rest for fermentation.
  9. After 10 minutes add 1 Eno Fruit Salt Packet in the Batter. Whisk again for 3 minutes in one direction only.
  10. Now directly add this Fermented Dhokla Batter in a Greased Container and
  11. Now in a pre heated steamer, like in a big bowl, boil 1 glass of water and put a stand in that,
  12. And now put this greased container filled with dhokla batter in a steamer and steam it for 20 minutes on medium flame.
  13. After 20 minutes of steaming, check with knife, if any batter or water you see on your knife, then you have steam it more.
  14. If knife came outside without any sticking, then your dhokla is perfectly steamed.
  15. Now let’s prepare simple but super delicious tadka water for our simple short dhokla recipe.
  16. Now in a separate pan, heat 1 table spoon of oil,
  17. Then add half tea spoon of mustard seeds in the oil,
  18. Next add a pinch of asafoetida in the oil,
  19. Next add few curry leaves and 3 slit cut green chillies in the oil and now mix and cook for 30 seconds on medium flame.
  20. After 30 seconds, add ¼ cup quantity of water and mix perfectly,
  21. Now add powdered sugar and again perfectly and cook for more 1 minutes on medium flame.
  22. Now your tadka water is prepared perfectly, so now come to the steamed dhokla container.
  23. Cut dhokla in your preferred shapes and now add this tadka water on top of the dhokla’s and enjoy.

  1. Dhokla Batter Consistency is the main reason for your fluffy, soft, airy Dhokla Recipe.
  2. So if you want perfect dhokla recipe, then don’t make your dhokla batter too thick or too watery or runny or thin dhokla batter.
  3. When whisking dhokla batter, always whisk in only one direction. This is because, when you whisk dhokla batter, it will form air bubbles in dhokla batter,
