What is Gobi Manchurian?

Sooo, gobi Manchurian is Indian style Chinese Snack, which you can enjoy in your evening time mostly and also in your lunch and dinner time.

So Gobi Manchurian is what you first marinate, then fry and then you will give taste to it with my secret sauce and secrets ingredients, and then you will get served hot and enjoyed.

So, now let’s move to the ingredients list first. Then cooking instructions, then my pro tips.

Make sure you read them must. If you want to cook gobi Manchurian better than me.

Ingredients in Gobi Manchurian Recipe:

I am taking ingredients quantity for 2 person’s evening snack time.

  • First take 1 big and fresh Cauliflower (Phool Gobi)
  • Then take 1 cup quantity of Corn Flour (makai ka atta, butte ka atta)
  • Next take half cup quantity of Maida (all purpose flour)
  • Then take 3 table spoon of green chilli paste
  • Next take 1 table spoon of fresh ginger and garlic paste
  • Next take 1 table spoon of Aromate Powder  (my secret ingredient)
  • Then take 20 pieces of Garlic Cloves
  • Next take 1.5 inch pieces of clean ginger
  • Then take 2 green chillies
  • Then take 1 finely chopped onion and
  • Next take 1 cup quantity of mix capsicum (red, green, yellow) finely chopped capsicum pieces
  • Next take 1.5 table spoon of Dark Soya Sauce
  • Then take 1.5 table spoon of Tomato Sauce
  • Next take 1.5 table spoon of White Vinegar
  • Then take 1 table spoon of salt
  • Lastly taste fresh finely chopped handful of coriander leaves

Gather all these 16 ingredients first, so that you don’t miss any ingredients while following my next simple and easy to follow cooking instructions.

So let’s move to the cooking process with my simple stepwise with picture help steps.

Instructions For Cooking Perfect Gobi Manchurian Recipe:

Step 1:-

So first take 1 big cauliflower (Gobi) and wash it, soak and clean it with kitchen towel. And

Next carefully cut cauliflower in perfect 1 inch size pieces. Remove all the stems, use or take only florets part.

Not too big, not too small cauliflower pieces, or else cooking and taste would be little raw.

Step 2:-

Now take a karahi and in the add enough water so that we can boil our cauliflower pieces.

But first, in the boiling water add 1 table spoon of salt and mix it.

Now turn off the gas flame.

Next add these cauliflower pieces in the boiling water and leave this cauliflower pieces in boiling water for 5 minutes.

In this much time our cauliflower will become soft as well as cauliflower will clean perfectly.

So don’t skip this step.

Or

If you don’t have this much of time, then simply boil this cauliflower pieces for 2 minutes on high flame.

Cauliflower becomes soft and clean also.

Step 3:-

Now after minutes of rest, now drain the water and remove the cauliflower pieces in a separate bowl.

Because we have to make it little dry, to do the next step.

Step 4:-

Now let’s marinate this cauliflower. So

First add half tea spoon of Salt, half tea spoon of red chilli paste or powder,

Then add 1 table spoon of fresh ginger and garlic paste,

Lastly add half tea spoon of Aromate Powder in the cauliflower bowl. And now mix it perfectly. And leave it for 5 minutes.

While our cauliflower is marinating, let’s do the next step.

Step 5:-

Now again take a separate bowl for thick batter in which we have to cover and dip our cauliflower.

So in a separate bowl,

Add 1 cup of Corn Flour

Add half cup of all-purpose Flour (maida)

Add half tea spoon of salt

Add 1 table spoon of red chilli paste or use can use red chilli powder here

Add 1 table spoon of Aromate powder in the bowl and

Now mix all these ingredients with flours perfectly and add little little water and make a thick batter.

Don’t make too liquidy batter, or else your cauliflower won’t coat in batter perfectly, so enough thick batter is must.

too much thick batter can make clumps, so take a note.

Step 6:-

Now add this marinated cauliflower pieces in this thick batter.

Don’t directly add all the marinated cauliflower pieces in the thick batter,

because while cauliflower is marinating, water comes down, if u add directly in the batter, then it can become more watery.

So add only marinated cauliflower in the thick batter.

And now mix marinated cauliflower and thick batter perfectly.

And if batter becomes watery after you add cauliflower, and your cauliflowers are not coating the batter perfectly, then

You can add little more corn flour and mix and coat all the cauliflower pieces with the thick batter.

Step 7:-

Now take a karahi and add enough oil, so that we can fry our marinated and perfectly coated in corn flour batter Gobi.

So add enough oil in the karahi and heat it first,

Then turn the gas flame to medium and now add 1-1 cauliflower pieces in the oil.

Don’t add too many pieces, or else cauliflower pieces will stick to one another.

After adding gobi pieces in the oil, now first fry it for 4 to 5 minutes on medium flame.

Remove it and again after 4 minutes, again fry gobi pieces in the hot oil more 2 minutes on high flame.

This will give your gobi fry a nice colour and taste.

This is important, follow exactly as I shared the instructions.

Once done, now remove all the fried gobi pieces in a separate bowl and we will move to the next step,

Step 8:-

Now take 20 pieces of Garlic Cloves and chop them finely into very small pieces,

Next take 1.5 inch size of ginger, peel it and chop it also finely into very small pieces,

Then cut 2 green chillies also finely very small pieces,

Next take 1 onion and chop it also finely into very small pieces,

Then take 3 colours of capsicum and chop them also into finely small pieces. Quantity should be 1 cup.

So I am telling you is, chop all these ingredients (garlic, ginger, green chillies, onion, capsicum) in very small pieces.

Because when you add them in the gobi Manchurian recipe, and when you take your bite,

Then all the ingredients taste will be equally burst in your mouth.

So this is also very important, don’t skip cutting ingredients in finely pieces.

Step 9:-

Let’s prepare the sauce for our gobi Manchurian recipe.

So for this, take a cup and in that add 1.5 table spoon of Dark Soya Sauce.

Next add 1.5 table spoon of White Vinegar

Then add 1.5 table spoon of Green Chilli Sauce

Next add 1.5 table spoon of Tomato Sauce

And lastly add little water in the cup and mix everything perfectly.

Step 10:-

Now add 3 table spoon of oil in the karahi or pan and

In the heating oil, add 3 table spoon of finely chopped Garlic, 1 table spoon of finely chopped ginger, and then add 1 table spoon of finely chopped green chilli in the karahi, in the hot oil.

Now turn the gas flame to medium to high and cook these (ginger garlic, green chilli) for few seconds.

Step 11:-

Now add 1 finely chopped onion pieces in the pan and cook for at least 30 to 40 seconds, so that the raw taste of onion disappears.

Now add 1 cup of mix finely chopped capsicum in the pan and mix it and cook it for only 20 to 25 seconds on medium heat.

Don’t overcook the capsicum, or else you will lose the crunchy taste of capsicum.

Now add half cup water in the karahi and mix.

Step 12:-

Now add the sauce paste which you have made in the step 9.

Yess add this sauce in the pan and add half tea spoon of salt,

Half tea spoon of Aromate Powder, and lastly add half tea spoon of red chilli paste and

Mix all the ingredients perfectly and then

Add 2 table spoons of fresh finely chopped coriander leaves in the karahi and cook it on high flame.

Step 13:-

Now take 1 table spoon of Corn Flour in a cup and half little water and make liquidy sauce,

Then add this corn flour sauce in the karahi and mix it.

This will make our gravy more thick and it tastes better. cook this sauce on high heat for only 1 minute.

Now our sauce, or you can say gobi Manchurian gravy is ready.

You can use this gravy in any type of Manchurian recipe, like cabbage Manchurian, vegetables Manchurian, gobi Manchurian, etc.

Now let’s move to the final step.

Step 14:-

Now add that perfectly fried Gobi fry in this gravy in the karahi and mix it for 1 minute.

Don’t overcook it. Just mix it until all the fried Gobi covers in the gravy.

Once done, now remove it from the gas and serve it hot in a plate and

Garnish it with some fresh finely chopped coriander leaves and green onion.

Pro Tips for Cooking Gobi Manchurian Recipe:

Tip number 1:-

Use fresh cauliflower, wash it perfectly, because sometimes in cauliflower, white colour germs u can find.

So when you cut cauliflower cut them into perfect 1 inch size or bites size florets.

And then next add these florets in hot boiling water for 5 minutes, this will make your florets soft and germs get remove.

So our first tip is- use fresh cauliflower, wash It perfectly, cut in perfect bite size, then keep them in boiling water for 5 minutes.

Tip Number 2:-

This is very important tip, so don’t skip.

When you blanch Gobi Florets in boiling water, after that, don’t forget to dry Gobi florets perfectly with kitchen towel.

Because moist Gobi Florets can make your marinated florets soggy and batter will become liquidy.

And this will not coat Gobi florets perfectly with spices and batter.

So don’t forget to dry your Gobi Florets with kitchen Towel Perfectly.

Tip Number 3:-

For crispier Gobi Fry, don’t forget to mix and use the best combination of Corn flour and All Purpose Flour.

Corn flour will make your gobi more crispy and all-purpose flour will hold the flavours and corn flour on gobi perfectly.

Tip Number 4:-

Don’t forget to add spices like red chilli powder, black pepper, salt, ginger and garlic paste and Aromate powder in the Gobi.

Then marinate Gobi florets for 5 minutes. This tip will give you extra flavour in your gobi fry when you eat them.

Tip Number 5:-

Make your batter perfect thick, not too thick and not too liquidy.

Liquidy batter will not coat perfectly with your gobi florets and thick batter will make clumps.

So perfect consistency of corn and all purpose flour mix batter is must.

Tip Number 6:-

When you go for gobi frying step. Make sure oil is enough hot for gobi fry.

Because if the oil is not enough hot, and you try to fry gobi, then gobi will absorb more oil in them and your gobi fry will become soggy.

And it will not taste good. So enough hot oil is must before frying gobi.

Tip Number 7:-

When you fry gobi florets, don’t overcrowd florets in karahi. Fry it in small batches, it will fry perfectly and become crispy.

Tip Number 8:-

Double frying gobi florets will give you extra crispiness.

First fry gobi florets for 4 to 5 minutes on medium heat, then after 5 minutes,

Fry again gobi florets for more 2 minutes on high flame.

Doing this step will give you extra crispy Gobi Fry.

Tip Number 9:-

Chopping all the vegetables finely equal size like very small pieces is very important,

This will give you the equal taste of all the vegetables, when you take gobi Manchurian bite in your mouth.

Tip Number 10:-

Use only dark soya sauce for darker colour and richer taste of gobi fry.

Tip number 11:-

If you want gravy wala gobi Manchurian, then you can add more water in the sauce before adding gobi fried pieces in the sauce.

After adding enough water in the sauce, according to your desired quantity of gravy, cook sauce until a nice boil comes,

Then add gobi fried pieces in the sauce and garnish it with fresh coriander leaves and serve it hot.

Tip Number 12:-

If you want crispy gobi Manchurian, then don’t overcook fried gobi florets in the sauce.

Just toss fried gobi florets in the sauce for only 30 seconds and serve it hot.

This way, you can get hot and crispy gobi Manchurian recipe.
