We need ingredients for chicken marination for cooking chicken tikka and we need ingredients for masala (gravy) for our chicken tikka.
So first, we will gather all the ingredients, then we will move to the cooking process.
Ingredients for chicken marination:
- I am taking 1 KG of Chicken
(Good enough for 4 to 6 person in the family) here I am taking with bones and with skin chicken pieces,
Because I can’t eat only soft chicken breast pieces, so you can also take
1 kg of with bones, with skin chicken pieces and cut them into according to your preferred sizes.
- Next Take 1 Cup of Thick Curd (dahi)
- Then take 1 good size of lemon
- Next take 2 table spoon of freshly grinded ginger and garlic paste
- Next take 1 table spoon of Degi Mirch Powder (or you can take kashmiri red chilli powder)
- Next take 1 table spoon of Turmeric Powder
- Then take 1 table spoon of Cumin Powder
- And next take 2 table spoon of Coriander Powder
- Now if you bought chicken tikka masala powder, then take 1 table spoon of it now (OR you can simply take 1 table spoon of garam masala powder).
- And lastly for chicken marination, take Salt 1 table spoon.
These are the 10 ingredients we are using for chicken marination, we have to prepare chicken tikka with this chicken marination.
But before, let’s gather some more ingredients for our masala (gravy).
Ingredients for the Gravy (Masala): {for Chicken Tikka Masala}
- First take 4 Table Spoon of Ghee for Best Taste. (OR you can take any cooking oil)
- Next take 2 good size of onions and chop them finely into thin slices
- Next take 4 fresh red Tomatoes and make a smooth puree of tomatoes.
- Again here take 1 table spoon of Ginger and Garlic Paste
- Next Take ½ (Half) tea spoon of Cumin Seeds (jeera)
- Next take 1 Cinnamon Stick (should be 1 inch in size) (Daalchini)
- Next take 4 to 5 green Cardamom Pods (Elaichi)
- Then take 4 to 6 Cloves (Loung)
- Then take again 1 table spoon of Corinader Powder
- Next take 1 table spoon of Kashmiri red chilli powder
- Again if you have chicken butter masala powder (store bought), then take 2 table spoon of readymade chicken tikka masala powder
Or if you don’t have market bought chicken tikka masala powder, then simply you can take half table spoon of garam masala powder.
- Very Important Ingredient Take 1 cup of Full Heavy Cream
- Next take salt half tea spoon
- Then lastly take fresh finely chopped coriander leaves for garnishing.
These are the 14 ingredients, we will use to prepare the gravy for our chicken tikka.
Now let’s see the easy to follow instructions for cooking best authentic chicken tikka masala.
Instructions for Cooking Chicken Tikka Masala Recipe Stepwise:
Step 1:- is Chicken Marination Process:
Here we will take 1 good size of bowl, good size enough to marinade our 1 KG of Chicken.
Now in the bowl, add 1 cup of full thick Curd (dahee), and then add fresh 2 table spoon of ginger and garlic paste, 1 table spoon of degi mirch or Kashmiri red chilli powder,
1 table spoon of turmeric powder, 1 table spoon of cumin powder, 1 table spoon of coriander powder,
1 table spoon of chicken tikka masala powder or garam masala powder, and 1 table spoon of salt,
Add all these ingredients in a bowl and mix them and make paste.
Next add that 1 kg of with bones and with skin chicken pieces in the masala bown,
Then squeeze that full lemon on top of the chicken pieces,
And now mix it perfectly, all the chicken pieces should coat perfectly with all the masala.
Now very important step, you have to keep this chicken marination for 2 hours of Rest, or you can keep this chicken marination for whole night in the refrigerator for more best flavours.
Step 2: Process of Grilling, roasting, or frying this chicken Marinaition:
If you don’t have oven or griller, the you can use tawa to make chicken tikka.
In tawa, first add 2 table spoon of ghee or any cooking oil and dry fry the chicken pieces for 8 minutes on one side and 8 minutes on another side of the chicken.
Don’t over load tawa with chicken pieces, or else, you won’t get best fried chicken tikka in tawa.
Or
If you have oven, then preheat the oven and roast chicken pieces for 15 minutes in oven.

See, we are cooking Chicken Tikka Masala, right? So it is not much important to grill or roast chicken tikka in the griller or in the oven only,
If you don’t have oven or griller, then you can dry fry the chicken pieces in the tawa also, which we have marinated for 2 hours.
Or
If you have oven or griller, then best you can do is grilling or roasting the chicken pieces.
Step 3: now let’s prepare the Gravy (masala):
Here first take a pan or kadahi and add 4 table spoon of ghee or any cooking oil
And then heat it for few seconds, once oil or ghee is hot, now
Add half tea spoon of cumin seeds, 1 cinnamon stick (1 inch size), 4 to 5 green cardamom pods, 4 to 6 cloves (loung) in the pan or kadai in the hot oil,
And let it cook for few seconds, the nice aroma (khooshboo) will come from the whole spices, which u have just added in the pan,
Step 4:
Now add those thinly sliced onion pieces in the pan and cook onions, until they turn into nice golden brown in colour, (on medium heat).
Once you see, your onions are brown, now add 1 table spoon of fresh grinded ginger and garlic paste in the pan and
Cook it for 1 minute on medium flame, in this much of time, the raw smell of ginger and garlic paste will disappears.
Step 5:
Now in 5th step, add 4 tomatoes puree in the pan and mix it in the pan and slow cook it for 4 to 5 minutes on low flame,
After 4 to 5 minutes, now time to give masala a taste,
Step 6:
So here add, 1 table spoon of coriander powder, 1 table spoon of Kashmiri or degi red chilli powder, ½ (half) tea spoon of turmeric powder,
2 table spoon of chicken tikka masala (readymade store bought) or you don’t have, then add half tea spoon of garam masala powder,
And half tea spoon of salt in the pan in the tomato pure mixture, and mix all the ingredients gently.
And now let all this mixture cook again for 5 to 6 minutes on low flame.
In this much of time, all the spices will release their oil and all the flavours will mix perfectly.
Step 7:
Now, this step is very important for chicken tikka masala recipe, which is,
Now add 1 full cup of thick heavy cream in the pan and mix it well gently.
And allow it to cook for few more minutes on very low flame,
The gravy becomes thick in few minutes, if you cook it on very low flame.
Step 8: time to give heart to the chicken tikka masala recipe:
Once your gravy is little thick, now add those grilled or roasted chicken pieces in the pan.
And mix it well and let it again cook for another 5 to 8 minutes on very low flame.
So that, our chicken tikka absorbs the flavours of masala in it.
After 5 to 8 minutes of slow cooking after adding chicken pieces in the masala,
Now you can taste little bit of the chicken tikka masala and taste,
If you want to adjust salt, then adjust it,
If everything is perfect, then simple garnish it with fresh finely chopped coriander leaves.

- For best taste, take only ghee, if you don’t have, then don’t worry, any cooking oil would be fine.

- And yess, when you take curd, then take only thick curd, or else, when you put chicken for marination, loose curd will make your marination watery.
