After eating my style dhansak recipe, u will definitely going to forget about that restaurant’s oily dhansak recipe.

Just imagine a spicy, sour, and little hint of sweet taste masaledar gravy with those soft and tender mutton pieces or chicken pieces melting in your mouth. Aahhhhhhhh woooooooooow.

It’s aroma (khooshboo) itself will make you more hunger to crave it like haven recipe.

Now let’s start cooking, so for that first let’s gather the ingredients for dhansak recipe.

First i will share ingredients, then step wise instructions for cooking dhansak recipe in english and then i will aslo share some super helpful tips for cooking this recipe.

so let’s not wait anymore and start cooking with gathering ingredients first for cooking dhansak recipe.

Ingredients for Dhansak Recipe:

  • First take protein punch 1: 500 grams (half KG) of tender mutton pieces or chicken pieces, which u eat, should melt in your mouth, after cooking, Off course.
  • Next take protein punch 2: which is 1 cup of masoor dar or you can take brown lentils.

IMPORTAN NOTE: if you want to cook mutton dhansak, then take 500 grams of mutton pieces, if you want to cook chicken dhansak, then take 500 grams of chicken pieces, and if you want to cook veg dhansak, then you can take ONLY dal (pulses or lentils) which i have given in the below picture.

TAKE 1 or 2 types of dal (lentil) for sure in your non-veg dhansak.

  • Next take your favourite 2 or 3 vegetables from below given image: like 1 finely medium chopped capsicum (Shimla mirch), 1 thinly chopped onion, next take 2 fresh and red finely chopped tomatoes, then take 1 cup of finely chopped French beans and then take ½ (half) cup of peas.

I am taking these vegetables, cause I think, fresh colours and crunch of vegetables will double the fun in every bite of the dhansak.

And this is also the speciality of this recipe, combination of vegetables and soft tender mutton or chicken Pieces. This is not common in Indian style non vegetarian food. Right? Yesss.

  • Now let’s take the real stars of this dhansak recipe, which are magic of spices (masalas). Like whole spices, full flavours, right? Yesssss.
    • For spices, take 1 table spoon of coriander seeds, (dhaniya k daane)
    • Then take 1 table spoon of cumin seeds (jeera)
    • Next take 1 table spoon of black peppercorns (kali mirch)
    • Then take magic of warm spices like 1 inch dalchini (cinnamon stick)
    • And take 3 to 4 laung (cloves).
    • And for sour twist, take a small piece of tamarind or you can take 2 table spoon of tamarind paste.
  • Now let’s take the treasure of aroma, 2 inch piece of ginger (adrak) and 5 to 6 pieces of garlic cloves (lehsun)

IMPORTANT NOTE: Now many of our parents can’t handle the spiciness of whole spices ( above khade garam masale) which we are using in this recipe, which are the stars also, to reduce the heat of this recipe, here you can add a tough of sweetness with half finely chopped apple or half table spoon of sugar or you can use half cup of finely chopped apricot.

  • Next take 2 good table spoon of any cooking oil
  • Then take salt according to your taste
  • Again take water as much needed (I’ll tell you in the instruction section)
  • Lastly take fresh coriander for garnishing.

These are not just a ingredients list, but I will say, these ingredients are the roadmap to your super delicious dhansak recipe with all these flavourful ingredients.

Ok so now dhansak is ready to become a superstar now, so let’s unlock the secrets with our step by step guide, instructions to cook dhansak recipe.

Instructions for Cooking Authentic Dhansak Recipe:

Step 1:

Let’s start cooking dhansak with spicy start, so for this, take a heavy bottomed kadai or you can take pan and heat kadai or pan for 10 seconds on medium heat.

And add 1 table spoon of coriander seeds (dhaniya k daane), 1 table spoon of cumin seeds (jeera), 1 table spoon of black peppercorn (kali mirch) in the  kadai.

Then cook these 3 spices for 7 to 10 seconds on low heat, spices will release their aroma (khooshboo), once done, now grind them and make powder.

Step 2:

Now let’s make dhansak more delicious, so again add 2 table spoon of oil in the kadai and add 1 finely chopped onion  in the kadai and cook until the onions, become soft and shiny like translucent,.

It will take hardly 4 minutes, if you cook onions on a medium heat.

Next add 1 finely chopped capsicum (Shimla mirch), 1 cup of finely chopped French bean and half (1/2) cup of peas (matar) in kadai, cook for more 2 to 3 minutes on medium heat.

Then add freshly grinded or chopped 2 inch piece of ginger and 4 to 6 garlic cloves in the kadai.

Step 3:

Now the spicy fun part starts here, add that powder in the kadai, which you have made in step 1, a powder of coriander seeds, cumin seeds and black peppercorn seeds powder.

Then add 1 inch cinnamon stick (dalchini), 3 to 4 laung (cloves) in the kadai and mix everything good and cook it for 2 or 3 minutes on medium heat.

You will notice, spices will release their flavours.

Step 4:

Now let’s get a tangy sour taste in our dhansak recipe with tomatoes.

Add 2 finely chopped tomatoes in the kadai and let it cook on low to medium heat for 4 to 7 minutes.

Tomatoes will become little soft and mushy.

Step 5:

Time to add the heart of dhansak.

You can add your preferred meat here, like if you want to make mutton dhansak recipe, then you add 500 grams of mutton pieces in the kadai.

Or if you want to make chicken dhansak recipe, then you can add 500 grams of chicken in the kadai,

Or

If you want to make veg dhansak, then this is the time to add your lentils (pulse or dal)

U can add 1 cup of masoor dal or brown lentils, if you are preparing veg dhansak recipe.

 

After adding the heart of dhansak recipe ( 500 grams of mutton or chicken or 1 cup of dal), mix everything good and coat everything with mutton or chicken or dal.

 Step 6:

Now comes the moment of peace.

Add water in the kadai, as much thick gravy you want. And let it come to a boil first on high heat for 3 minutes, then turn the flam to slow medium.

And let it simmer.  (How long?)

Until your protein (mutton or chicken or dal) is cooked perfectly on low heat.

It will take 40 minutes if you are cooking mutton. 20 minutes for chicken and for dal hardly fifteen minutes.

This slow cooking will allow all the flavours and ingredients to cook and mix perfectly.

Step 7:

Now the final touch, do you remember that tamarind or 2 table spoon of tamarind paste?

Yesss, now it’s time for tamarind paste to shine. Add that 2 table spoon of tamarind paste in the kadai and give it final mix or stir.

Don’t worry about the sourness of the curry, here you can adjust according to your taste.

You can add 1 table spoon also, if you don’t want your dhansak recipe to sour more.

Step 8:

Now your master piece is almost complete. You can give it a final mix and taste the dhansak recipe and adjust the spices and flavours according to your taste.

Add 1 finely chopped fresh coriander in the dhansak and cover the kadai.

Take a deep breath, and admire your creation, because you just made a restaurant style dhansak recipe at home.

  1. For more flavours, you should toast your whole spices like coriander seeds, cumin and black peppercorn on low heat for sure.
  2. Remember don’t burn the base, I mean to say, don’t you every try to overcook onions like golden brown colour, to avoid darker colour of the gravy. (dhansak is light coloured gravy by parsians)
  3. Tamarind sweetness and sourness is important in this dhansak, because some of you may not take the heat of whole spices, so remember, you can add little little tamarind paste, because you can always add more, but you can’t take it away.
  4. The thicker the gravy, the more tastier the curry. (you can adjust water according to your taste)
  5. Do u know, this curry is even more delicious in next day, try to save leftover and eat it the next day for more flavourful dhansak curry.
  6. If you feel adventurous, then you can add your preferred meat like shrimp, fish cubes, mutton, chicken, lamb or even you can add tofu if you are a vegetarian.
