Butter chicken recipe Ingredients:
I love my butter chicken pieces with bones and with skin chicken pieces (bones-in and skin-on)
Yess, you have heard that right, butter chicken is purely soft chicken pieces with delicious sauce. But I prefer with skin, with bones chicken pieces.
So I am taking 1 KG with skin and with bones Chicken pieces
Quantity = good enough for 4 to 5 persons
Ingredients for chicken marination:
- Star Ingredient, Take 1 KG of with skin and with bones Chicken pieces
- Next take 1/2 (half) cup of fresh plain curd (Dahee)
- Then take 1 good table spoon of lemon juice
- Then take 2 table spoon of fresh ginger and garlic paste
- Next take 1 good table spoon of Red Chilli powder
- Next take 1 good table spoon of Coriander Powder
- Next take ½ (half) tea spoon of turmeric powder
- Then take ½ (half) tea spoon of garam masala powder
- And lastly for chicken marination take ½ (half) tea spoon of salt
Now Ingredients for preparing butter chicken sauce:
- Here first take 3 table spoon of butter (unsalted butter would be perfect here)
- Next take 1 table spoon of any cooking oil
- Then take 2 bay leaves
- Then take 4 green cardamoms
- Next take 4 to 6 cloves

Instructions for cooking butter chicken recipe step by step
Cook Butter Chicken Recipe in Just simple and Easy to Follow 11 Steps:
Step 1:- First Marinade the Chicken
For this we will take a large bowl and in that add ½ (half) cup of fresh plain curd (dahi)
Then add 1 good table spoon of lemon juice, 2 table spoon of ginger garlic paste,
1 table spoon of coriander powder, then ½ (half) tea spoon of turmeric powder,
Then add ½ (half) tea spoon of garam masala powder and ½ (half) tea spoon of salt in the large bowl
Now add the star ingredient 1 KG Chicken in the large bowl and now mix everything perfectly,
Chicken pieces should be coated with all the masalas perfectly.
Now cover the bowl with lid and we will keep it for marination process for at least for 1 hour or
For more deeper flavours, you can keep it for overnight in the fridge.
Step 2:- Tender Fried Chicken:
Now, after 1 hour of chicken marination, now take a pan and add 2 table spoon of oil in the pan
Heat oil for 1 minute on medium heat, next add those 1 KG marinated chicken pieces in the pan
And you have to cook chicken pieces on slow to medium heat for 7 to 8 minutes on one side and 7 to 8 minutes on other side of the chicken
Basically we are here frying our marinated chicken pieces until 80% chicken cooks.

If you have oven, best you can do is, first preheat your oven to 400°F (200°C)
And put all the marinated chicken pieces on the baking sheet of oven and bake it for 20 to 24 minutes.
Note: you have to cook marinated chicken pieces like chicken fry, not cooking like chicken curry
Step 3: Sauce Preparation:
Now again, take a separate heavy bottomed pan or kadai and in that,
Add 3 table spoon of butter and 1 table spoon of cooking oil in the pan and heat it for few seconds, until butter melts
And now add 2 bay leaves, 4 green cardamom pods, 4 to 6 cloves, and 2 cinnamon sticks (1 inch each) in the pan
And sauté it (let it cook) for a minute on medium heat
Step 4:
Now add 2 finely chopped onion slices in the pan and cook it for 5 to 6 minutes on medium flame
Onions will become little soft and shiny, then add 1 table spoon of ginger garlic paste and
2 chopped green chillies in the pan and cook it for another 1 minute on medium flame,
Step 5:
Now add 3 finely chopped tomatoes in the pan and cook tomatoes for 10 minutes on low flame,
This much time is enough to soften and release the juices of the tomatoes while cooking.
Step 6:
Now take those ½ (half) cup of 1 hour soaked cashews and almonds and add in the mixer grinder and make a smooth paste of it
And then add cashews and almonds smooth paste in the tomato mixture pan and mix it perfectly.
Step 7:
Now time to give our sauce the taste with spices, so for this
Add 1 table spoon of red chilli powder, 1 table spoon of coriander powder, ¼ (half of half) tea spoon of sugar and ½ (half) tea spoon of salt in the pan
And mix it again perfectly and we will let this to cook for 15 to 20 minutes on low flame
This much time is enough to thicken the sauce and all the flavours will cook and release their flavours perfectly.
Step 8:
Time to add heart in the dish, which is those fried chicken, which we have prepared in the 2nd step.
Yess, now add those 80% perfectly cooked fried chicken pieces in the sauce pan
And mix it gently (don’t cut the chicken pieces mixing it roughly), and coat all the masala with chicken pieces
Step 9:
And now reduce the flame to very low and cover the pan or kadai and cook it for another 10 to 15 minutes
This will allow all the flavours and chicken pieces to combine perfectly with their flavours.
Step 10:
Now the second final step but super important ingredient of this butter chicken recipe,
now add ½ (half) cup of fresh heavy cream in the pan and mix it gently and let it cook for another 2 to 3 minutes on very low flame.
