Traditional Aloo Masala Dosa Recipe:
in traditional dosa recipe, we don’t add any baking soda or any market bought Eno Fruit Salt. just simple method by adding very few ingredients and perfect fermentation method to achieve that fluffy, soft and delicious traditional dosa recipe.
i have added aloo masala (potato filling) in this traditional dosa recipe. so don’t miss.
Instructions for preparing traditional dosa recipe with potato filling:
Washing, grinding, fermentation, boiling, potato filling preparation and finely dosa cooking in just 4 steps with pictures.
Step 1:-
Take 2 cup thick rice (rashan k chawal) and half cup White Urad Dal.
Wash rice and urad perfectly with fresh water for 2 to 3 times to remove the dust from them.
Next in a bowl,
Add 2 cup rice and half cup white urad dal in a bowl and add 4 cup water in a bowl and now
Cover the bowl and Soak rice and white urad dal for 3 hours.
Step 2:-
After 3 hours of soaking rice and white urad dal in a bowl, now
Transfer this rice and white urad dal in a mixer grinder, add little little water and grind it to a smooth paste.
Now leave this batter for 8 to 10 hours or for overnight for perfect fermentation.
Step 3:-
For potato filling, first boil 3 good sizes of potatoes, peel and mash potatoes using spoon.
Once done, keep it aside,
Now let’s prepare our Aloo Masala (potato filling for dosa):
So to do that,
- Heat 2 table spoon of oil in a pan and then add half tea spoon of mustard seeds and let it splutter for few seconds.
- Now add 3 green chillies, 3 dry red chillies, few curry leaves and 1 good size of finely chopped onion in this hot oil and cook for 2 minutes on medium flame.
- Next add Half Tea spoon of Turmeric Powder, Half Tea Spoon of Red Chilli Powder and Half Tea Spoon of Salt in this pan and mix and on flame, cook spices for 1 minute.
- Now add boiled, peeled and mashed potato in this mixture and mix potato with spices mixture perfectly.
- Next for garnishing add handful of fresh finely chopped coriander leaves in this potato filling,
- And lastly squeeze a lemon in this potato filling and mix it perfectly.
Now your potato filling is ready. So now let’s move to the dosa step.
Step 4:-
Now let’s come to the dosa batter, to which we have kept for fermentation for 8 to 10 hours or for overnight.
Now mix again with spoon in this dosa batter. And now
- Heat a heavy bottomed tawa (Griddle)
- Next add half tea spoon of oil in this hot tawa and spread oil in round circular form; so that, when you add dosa batter, it won’t stick to the tawa.
- Now add a spoon full (ladleful) of dosa batter in this hot tawa (griddle) and spread dosa batter in a circular form to make a thin layer of dosa and cook this dosa on medium flame for 3 to 4 minutes.
- Once you see, your dosa is looking golden colour from the middle or from the edges side,
- Now add ladleful of potato filling on top the cooked dosa and fold it in half and serve it in a plate with this coconut chutney.

New Dosa Recipe with New Chutney Recipe:

Preparation steps for new dosa recipe and new chutney recipe:
Step 1:-
In a mixer grinder, add all the below ingredients:
- Add 2 roughly chopped onions,
- Add 2 roughly chopped Tomatoes,
- Add 4 to 6 Big Garlic Cloves,
- Add 1 inch size of ginger,
- Add half tea spoon of red chilli powder
- Add half tea spoon of salt
- Add 1 table spoon of sambar masala powder
- Lastly add handful of coriander leaves in the mixer grinder
Add all these ingredients in a mixer grinder and make a smooth paste of these ingredients.
Step 2:-
Now in a separate pan, heat 2 table spoon of oil and then add half tea spoon of mustard seeds,
Next add 1 table spoon of white urad dal and some curry leaves,
Cook it for few seconds,
Now add that paste, which we have prepared in first step.
Yess add that tomato, onion paste and add little water, cover and cook for 5 to 6 minutes low heat.
Now your new chutney recipe is ready to be enjoyed with dosa.
So now, let’s see dosa recipe in different style:
New Dosa Recipe:
Step 1:- new dosa batter recipe:
In a mixer grinder all the below ingredients:
- 1 cup rice flour
- Half cup gram flour
- Half cup curd
- 4 to 6 garlic cloves
- 4 soaked dry red chillies
- Half tea spoon of salt
- 1 raw cube cut Potato
- Lastly little water
Add all these ingredients in a mixer grinder and make a smooth paste of it.
Now add half tea spoon of baking soda and little 2 table spoon water in this batter and mix it again perfectly.
Step 2:-
Now heat a griddle and add half tea spoon of oil
Then add ladleful of this batter and move the batter in a circular form to make a thin layer like this:
And on medium to low flame, cook this dosa batter until your dosa looks golden brown colour.
Add some ghee or oil on top the dosa batter and your new dosa recipe is ready to serve.

15 minutes instant suji dosa recipe:
try this 15 minutes instant suji dosa recipe with a touch of wheat flour batter with potato filling recipe.
Preparation method:
Step 1:-
Add all the below ingredients in a mixer grinder:
- Add 1 cup full of suji
- 3 table spoon besan (gram flour)
- 2 table soon wheat flour
Grind and make a smooth powder of these 3 ingredients using mixer grinder.
And transfer this powder in a separate bowl, and then add 1 cup curd, half tea spoon salt and half cup water,
Mix all this and make a smooth batter like this:
Cover it and leave it for 15 minutes.
Step 2:-
- In a separate pan, heat 2 table spoon of oil and then
- Add half tea spoon of mustard seeds,
- Next add 1 table spoon of chana dal,
- Add 1 table spoon of white urad dal,
- Add 1 table spoon of grated ginger,
- Add 1 table spoon of finely chopped green chillies,
- Lastly add 1 finely chopped onion in this pan and cook for at least 2 minutes on medium flame.
After 2 minutes, add half tea spoon of turmeric powder and half tea spoon of red chilli powder in this pan, mix and continue cooking on medium flame.
Next add 2 perfectly boiled mashed potato in this mixture and mix it perfectly and continue cooking.
Lastly garnish with fresh finely chopped coriander leaves.
And now your dosa masala is ready.
So now let’s move to the dosa preparation step.
Step 3:-
Now take that dosa batter bowl, to which we have kept aside for 15 minutes.
Now add half 4 table spoon of water and half tea spoon of baking soda powder in this dosa batter and mix it perfectly.
Step 4:-
Heat a griddle on high heat for 2 minutes,
Now turn the gas flame to low and add half tea spoon of oil and polish oil on the griddle,
Then polish griddle with little water on continue heating it.
Now add a ladleful of dosa batter on this hot griddle (tawa),
Spread this dosa batter in a circular form to make a thin layer
And cook this dosa batter until it turn to golden brown colour,
Once you see dosa is cooking on low flame till golden brown colour,
Now add that masala which we prepared in the 2nd step.
Yes add this masala on top of the dosa, you can spread it also this masala on the dosa.

How many hours to soak urad dal for dosa?
if you have time, then soak urad dal for dosa for at least 3 to 6 hours. but if you don’t have time, then you can soak urad dal for dosa in very hot water for at least 1 hour. and you don’t need to soak urad dal separately, you can soak urad dal and rice together for 1 hour in hot water.
Which rice is best for dosa batter?
if you want home-made traditional or best dosa batter, then try thick rice (raashan k chawal) for best taste, sticky and fluffy dosa batter. and with thick rice dosa batter, you don’t have to any baking soda or market bought eno fruit salt.
just soak thick rice, urad dal and just 2 table spoon of chana dal, 2 table spoon of flattened rice (optional), in hot water for 1 hour, make a smooth paste of it using mixer grinder and keep this dosa batter for 8 to 10 hours or for overnight. you don’t have to add baking soda or eno after this fermentation step. just try this thick rice dosa batter for your dosa. thick rice is best for dosa batter.

Why my dosa batter is not fluffy?
their could be three reasons, why your dosa batter is not fluffy:
- not grinding a smooth batter
- not keeping it for a enough time like 8 to 10 hours in warm temperature.
- not taking a correct ratio of rice and urad dal (1/3 of urad dal of rice).
if you have added to much water while preparing a dosa batter while grinding in a mixer grinder. then you can’t make a smooth paste of it.
then keep this smooth dosa batter in a warm temperature place, because cold temperature place need more and more time for fermentation. and insufficient timing of fermentation is the main culprit why your dosa batter is not fluffy.
What happens if urad dal is more in dosa batter?
if urad dal is more in dosa batter, then your dosa will become more airier, fluffier and crispy dosa. i know, urad is leaded with proteins, but too much urad dal in your dosa batter makes a thick dosa batter and it will be little difficult for you to spread dosa batter on tawa smoothly. and you will get a deep flavour of urad dal more if urad dal is more in dosa batter.
